Orange Dark Chocolate Chip Muffin ~ Eggless

K, so I have no idea what to write. I am sitting here staring at my laptop for the last fifteen minutes and I literally can think of nothing! Lots of vague thoughts ~ but I am trying hard to put the words into a decent meaningful sentence - "writer's block" anyone! 
So lets cut to the chase..for today I have a orange dark chocolate chip muffin for you guys, the combo which I absolutely adore. These are light, fluffy, citrusy, chocolaty and summery. Also, here's some excerpts collected from the glorious world-wide-web for your reading pleasure :)
Did you know the word Muffin either comes from the French word moufflet, meaning a soft bread, or from the German word muffe which is the name for a type of cake. As we all know there are two types of muffins which are famous, English and American. American-style muffins  are like little cakes, consisting essentially of butter, sugar and usually made with baking powder and soda. English muffins, on the other hand, are a cross between a bread and a cake and are are made from a yeast based dough.
So here goes the recipe that has the ability to make you sunny and chirpy..make sure you stock up on these for those times when you want to have cake but would rather eat something light.

Eggless Vanilla Chocolate Chip Cake



The humble vanilla cake is usually very well liked in an average Indian household especially if it is eggless and home-made. The oven which is a regular fixture in almost every kitchen in the US is usually not that common in the Indian middle class kitchen. Although this is changing rapidly, for the most part, cakes there are still made in a small portable electric oven. If you've ever seen or tried baking in one of these, you'd know that it is not the easiest of things to do.
For these reasons, the simple eggless vanilla cake was a big favorite in our family as well. This recipe is so popular in my family tree that every member that can cook has a written copy of it and has tried their luck at baking it atleast once. All the credit goes to my aunt who joined a baking class and where she got this recipe and then the rest is history. Since then I have of course baked several different types of cakes but this one still holds a special place in my heart. I have made some minor modifications like using chocolate cips instead of cocoa powder but the recipe is essentially the same. It is very easy to make, calls for a very few ingredients and tastes awesome.

Nutella Brownies


 
If you've read some of my previous posts you'll know I love nutella :)) and it is also not a secret that I am chocoholic. I just can't have enough of this yummillicious spread. My hubby sometimes teases me that nutella should be my middle name he he. In fact as I am writing this, another nutella recipe is coming to my mind :D I can't help myself as I always think nutella is, quite frankly, one of the best culinary creations out there — a mixture of chocolate and hazelnuts that almost defies words... too good! Well, I love brownies too. The dense fudgy squares are just irresistible. So one day I decided to attempt to incorporate one of Earth's best chocolaty spreads into brownies. And these are eggless and I used no butter and very little sugar.. is very easy to make and it consists of my most fav things nutella, dark chocolate and coffee mmmm... can't write anymore... here goes the recipe -

Dark chocolate nutella Truffles


Some wise man once said "there are four basic food groups; milk chocolate, dark chocolate, white chocolate and chocolate truffles". I couldn't agree more. If you have been reading my posts, you probably already know that I am a chocolate fanatic!! Among all its different forms of, dark chocolate truffles are my absolute weakness :) After having the store-bought ones a few times, I decided to try making these at home. As hubby and I like our chocolate with little coffee I add coffee in it. Also Nutella is something I absolutely adore so I added that too in my truffles and the result was a silky, smooth, decadent, sinful, melt-in-your-mouth chocolate delight... mmm!
