Caprese Flatbread


You could call it Pizza if you so fancy or even nanizza if you are feeling creative because essentially this yummy dish is nothing but classic caprese style toppings over a naan flat bread. A few moons ago I had shared a similar flat bread pizza with some classic makhani style paneer topping. Of course the choice of toppings is only limited by your imagination but for me a very good combination (when its not paneer of course) is a simple but a classic combo of tomatoes, cheese, basic and garlic. Not to mention it is much simpler to put together than a traditional pizza if you use store bought naans which work perfectly well in this preparation.

Sauteed Garlic Herb Mushrooms


When you are either learning the basics of cooking or have been at it for a while, being asked to create a dish from memory is always challenging and tricky. The challenge increases multiple fold when it has to be from someone else's memory. Yes that is the story behind this dish. This other day when I made pizza - which I have several times - hubs somehow decided to take a trip down the memory lane. He began describing how when he was in India, they had opened a brand new Pizza Hut in his city, one of the very first ones in the entire country in those times. He of course had paid a visit to eat a veggie pizza that as he describes cost an arm and a leg. The one thing they brought with the pizza was a sampler of sauteed garlic mushrooms on the house. The pizza was great, he goes on, but the taste of the mushrooms stuck with him. Of course I took the hint, asked him a few questions on what more he remembered of what it looked like, and tried it. Yes he said these were better than the ones he had way back when. What a relief!

Paneer-Matar Paratha


In case you missed my Aloo-matar paratha from a few moons ago, this paratha is similar only better, in that it has paneer - my favorite ingredient. I have sung praises of the stuffed bread or paratha in that post so pay a visit if you are super interested! Also I described how tricky it can be for first timer and takes a little practice to get it right. Anyway, addition of Paneer gives this stuffed paratha the added soft texture as well a mildly creamy taste along with the kick of the spiced up peas. This paratha is perfect for those times when you feel like eating a yummy bread and don't really want to deal with making accompaniments. Just enjoy with some spicy Indian pickle, a simple raita or heck even ketchup.

Buffalo Tofu Bites

I do not care much for tofu. Well read on, there's more to it. Of course I did not grow up eating tofu. Not so very long ago, it all started as a misunderstanding between mister tofu and I. I had heard a lot of good things about it. I even found out that it was made from bean curd which put me right at home with it. To top it all it looked like paneer, my favorite ingredient of all. That was the mistake. I tried it with the expectation for it to taste like paneer. Not tofu's fault. It is a great and very versatile ingredient but one of a kind. I have since tried it many different ways and this recipe is the best way I like it. Done appetizer style, breaded, baked and with the spicy kick of a homemade buffalo style sauce. Tofu is back again.

Jalapeno Popper Grilled Cheese


Quite often what I make is driven by what I feel like making. At times however I find myself coming up with ideas just to use up whats left in my fridge from my previous ideas. This time around it was pickled jalapenos that I had shared with you a few days ago. Now I am a big fan of jalapenos, especially the pickled ones. My pizza always has to have some and so do my sandwiches. I made two big jars and have been working through them but still had quite a bit left of the last jar. That is where these sandwiches come in. Pickled jalapenos done popper style between two slices of bread grilled to perfection.

Chocolate and Malai Peda for Holi/Five Minute Chocolate and Milk Fudge

Here's wishing all my readers a Very Happy Holi. Have fun, stay safe and healthy. This past weekend we were out on a road trip on a little vacation driving around the state to the usual vacation spots. Took some time off of the early part of spring break as well. By the time we got back yesterday, just in time for Holi, I already had several ideas crawling in my head for what to make for the festival of which - like most festivals - food is an essential element. Holi is all about having fun, painting each others with colors, spending an hour in the shower to get all the paint off you and then having some wonderful food from the kitchen. Coming back from our trip yesterday you would think I would take some time and relax but instead I went right to the kitchen (yes I did stop at the grocery store on the way). Since it was late at night, did some basic prep work and starting this morning  over a few hours put together five dishes. This sweet dish is one of them which in fact was easier of the five. You may find several versions of these Pedas out on the web that use almost similar ingredients. They are all done pretty much the same way with minor differences based on personal preference. I tried to put together the general concept of the dish together with my love for chocolate. A fine dessert to serve with an exquisite meal or a casual candy to have around and to pop in when you please.

Homemade Bagels with Jalapeno Cream Cheese spread


This is another one in the line of my attempts to recreate at home a commonly available preparation that I thought for the longest time nearly impossible or at least too difficult to create at home. The humble bagel definitely proved to me it sure is a little tricky and requires attention to detail to get the best result. I speak from experience. The first time I tried it, it got too chewy and tough. After much I though I figured out where I was going wrong. To get the right taste and texture, you have to be very mindful of how long you boil the dough, the right pinch of baking soda and finally baking it just right. Once you get it how you want it, and not to mention with the easy-to-put-together but outta this world jalapeno spread, a fresh out of the oven hot bagel with a spicy spread will be close to if not the best kind of bread you ever had.

Rose Lemonade

The first whiff of this drink will put you somewhere in the middle east that too in the times when kings and queens prevailed and they often enjoyed exotic drinks from ornate cups. At least that where it put me. Yes, exotic is the right word for this drink. To bring you back to modern times, thaw out of winter and welcome spring while you enjoy your favorite TV show at the end of an exhausting day - it is guaranteed to put a spring in your step - no pun intended. I already spoke enough about the smell and yes that is the best part and what's more, that fragrance makes the crisp bubbly lemonade - the kind that you have had several times before - just that extra special.

Bhindi/ Okra Masala


There are a couple of posts in which I have used okra as the primary ingredient. Every time I use okra, I try to make it a point to clarify that it is a tricky vegetable to cook with. If not done right, it can get slimy and texturally unappealing. A simple trick can get it right and avoid keeping you from liking an otherwise wonderful vegetable. The trick is as simple as dry them completely after washing and before cooking and always cook them uncovered. Most people just fry them to avoid the slime but using these two simple tricks, you can uncover a whole new side of okra. This okra preparation is tangy and mildly spicy and one of my personal favorites. Even though you will intend to serve it as a side to a meal, they tend to be more popular as finger food and will be gone before you get a chance to serve!

Quick Pickled Jalapenos

Yesterday I was at our local farmer's market. They have the most beautiful and colorful stuff all around. I go crazy around all the fresh produce they have. The sight, the smell, just too good to resist. I began picking all different kinds of vegetables. The pretty one... the colorful one... the new kind (which I had no idea what to do with) whatever I could get my hands on. Hubs was watching from a distance waiting with the kiddo, pretending to not know the crazy lady raiding all the vegetables ha ha. I love my trips to the local farmer's market for our regular quota of vegetables and fruit. There’s always an excitement waiting to see what produce has arrived. Every season seems to bring some new variety of vegetable and fruit. Lot of new varieties, kinds that was never familiar to me growing up. Nowadays, I take a lot of them for granted because they are easily available.
For those who are not very familiar with Jalapenos, they are thick skinned and a moderately hot variety of Mexican green chillies. A smoked and dried Jalapeno is called Chipotle.
Pickle or achaar to me as like every fellow Indian is the tangy, hot thick raw, mango/ chilli pieces drained in hot spices infused oil and oh so mouthwatering. I have had my share of pickles (the pickle monster as I was named by my mom). Though, for the most part, I detest vinegar based western style pickle, but this one I absolutely love, I keep buying a jar whenever I visit the supermarket and eating like a side not a condiment much to my hubs surprise. That was until yesterday when I saw these fresh, beautiful (and to my pleasant surprise, so very inexpensive) peppers yesterday in the market. The idea to pickle them was instant and I am glad I did. These can jazz up any boring meal - nachos or tacos, wraps or sandwiches, pizza - just about anything! To top it all, it takes just about 15 minutes to put it together (of course beside the couple of days in the fridge for the pickling process). If you are a fan as big as I am of tangy and hot stuff, trust me, this pickle is absolutely addictive.

Vegetable Pizza Pull Apart Bread

Doesn't this bread just look just worth drooling over. For me at least I have seen this made by several folks and have wanted to make it for a while now. Funny thing is - I actually have. This is probably the third time around that I am making this but it was only this time that I actually got around to be able to hold everyone off till I took the pictures! A perfect snack (or even lunch) for bread lovers and a great crowd pleaser, this bread not just looks great itself, it will make you look good too. Slicing the bread just right takes some patience. Too deep a cut with make the bread fall apart and too little will not allow for enough filling. Filling it with veggie mixture needs some patience as well but tell you what, in the end it is all very well worth it. So pull away!

Baked Buffalo Broccoli Bites!

Now I realize the post before the last was Brussels Sprouts and here I am trying to sell you guys in to Broccoli - another vegetable that is famous in its notoriety for not being the most liked. But trust you me, after you eat this, you might just discover your new found love for this nutritious member of the cabbage family.
I speak from personal experience. Usually I try to make a vegetable many different ways - in a curry would be my first way, dry pan roasted, oven roasted, tandoori style, mixed with rice as a one pot meal and probably a couple others. Most vegetable are very agreeable to most these methods and come out pretty good. Your good old broccoli on the other hand, not so much. It usually only works for me only when roasted dry with some light seasoning. After tasting these bites, especially with the spicy homemade buffalo sauce, this will be the preferred way to eat broccoli in my household at least for some time to come.

Lemon Crinkle Cookies

If you have been a regular visitor to my blog you must have known by now that I have a clear obsession with chocolate and also most of my baked goodies are either chocolate based or consist of nutella. Every time I think of dessert, I think chocolate. Even when I am online looking for ideas, I type chocolate based search words... even when I am blog hopping, the category I check is chocolate baked goodies. You get the idea.
This time around when I was in the mood to bake some cookies I was again drawn towards making double choco, fudge (God help me :)). But this time I struggled hard and overcame my obsession. It was mainly because of my not-much-of-a-chocolate-fan hubs (how can you!). Baked a lemon cookie instead. I loved the results so much that from now on you will be seeing lots and lots of citrus in my baked goodies lol. These cookies are so fresh, light and flavorful that even a no dessert and only chocolate person like me ate 2 whole cookies (much to my hub's surprise) ha ha!!

Roasted Parmesan Garlic Brussels Sprouts with Sour Cream Dip


Who wants to eat brussels sprouts, right? If you were to make a list of commonly available vegetables that most people dislike, these little guys would most probably be very near if not the top of that list. Heck they use these even in TV shows when they have to show parents trying to stuff veggies into kids and the kids kicking up a fuss. Well, not in my family. Hubs loves them and the way he likes to put it "Who wouldn't especially if made the way you make 'em"! This was a new vegetable to me as well until a few years ago when their cute little cabbage shape got my attention. No points for guessing that curiosity got the better of me and I got a batch immediately. Of course the first thing I tried was to cook them like cabbages - in a curry. That was a success. Since then I have cooked them several different ways but these roasted ones are the most popular in my family. They are easy to make, not to mention very nutritious and with their crispy exterior and juicy soft insides, they make a great appetizer or a side to a meal.

Valentine Treats!


A lot is said about Valentine's day. It means different things to different people, all related in some shape or form to love and caring. Yes, you do not need a day set out to celebrate love but it couldn't hurt to take one day of your lives in a year to make an extra effort to express how you feel, go out of your way to show how much you care. When it comes to love and caring, it is always about the two most favorite people in my life, my little princess and hubs. One of the little ways in which I express myself is cooking something for them, and that 'something' almost always involves chocolate. Hot Cheesy Spinach Dip with Garlic Toast

Its snack time at USMasala again. And talking about snack time, it is just in time for the weekend to gather around your big flat screen with your favorite people and favorite snacks and just have a good time. Now I don't claim to be a big fan of the game, heck I barely know how it is played. I am still at heart the good old girl from that part of the world that lives and breathes a good game of Cricket. But watching a great game with family and friends gathered around definitely brings back some vivid memories. Just remember to handle this ever popular dip with care. It comes out of the oven really hot and just so flavorful and yummy with all that creamy spinach goodness ready to be scooped up with your favorite chip or a nice crunchy garlic toast that if you got too much into the game you might be scraping the bottom of the bowl - no pun intended.

Matar Paneer

Matar Paneer is arguably the dish that most number of people in the world have tasted. I go by the theory that every single soul that lives in the subcontinent has at least eaten it once - over a 1.25 billion people. That may be an embellished way of putting it but probably the best way to express the reality of this dish. One of the most common dish made from one of the most common ingredient in specialty Indian cooking, Paneer. A dish for all places and occasion. Be it a guest or the kids birthday or you simple feel like eating something special to anniversaries and weddings - there is a good chance matar paneer will be one of the dishes served. It sure was something my mother made for my birthday parties every year along with other specialties. It is also omnipresent. Every restaurant obviously offers it but if you ever find yourself driving in the most remote part of the country and pull over to eat in a rinky-dink roadside dhaba, rest assured you can order for a hot plate of matar paneer with roti.
The sweetness of the peas together with the creamy bite of the paneer brought together by a creamy gravy that you can make as mild or spicy as you prefer, just brings it all home especially with a piece of hot Naan.
Again, this dish is made with slight variations by different people. I make it a couple of different ways myself but this version I present is the healthy one where I avoid using cream or butter or cashews altogether which this dish normally calls for.

Baked Red Velvet Donuts!

My kitchen drawer where I keep my bake ware is almost always in a disarray. All the different shapes and sizes of pans and trays oftentimes do not play very well together when it comes to staying organized. Then to top that I just cannot resist buying a baking pan or tray that I come across and it catches my attention. The donut tray I used for this recipe was another such thing that I had to have when I saw it the other day at the store. It was a Wilton brand pan and this recipe was in fact right on the packaging itself. They make the perfect shaped donuts and whats better is that you can actually eat a few since they are baked and not deep fried. To kick it up another notch, if the donuts are the red velvet kind, what's not to like, after all who doesn't like red velvet cake. These came out really nice and soft and velvety and then with that cream cheese glaze on top, you just go 'yummm'. They are perfect  treat for the upcoming Valentine's day too.

Nutella Latte




This is so completely absolutely delicious. Nutella just makes anything and everything taste better. Go make up a cup and see for yourselves. Make a cup either to wake you right up in the morning and get you ready for the day or a quick hot cup in the evening to take the weariness of the day away. Mocha and hazelnut - a match made in culinary heaven. This version uses instant coffee but if you wouldn't have it without fresh brewed espresso, feel free.The smell of hot coffee seems perfect in this season but if you are the type that always prefers the frappe kind, I do have a similar cold coffee recipe here.

One Bowl Everyday Chocolate Cake

Yesterday afternoon as I sat on the couch watching TV and waiting for dear hubs to wake up from his catnap so we go shopping, I suddenly started craving for chocolate cake. Nothing too fancy, just something that felt like cake to eat and was not-so-calorie-laden. A simple no-icing chocolaty cake that I can whip up in a jiffy. That is when this was made - a one bowl wonder, fuss free cake with my everyday pantry ingredients. A very basic beginner recipe that you can try your hand at even if you do not consider yourself much of a baker. It is moist, chocolaty with a very nice coffee flavor to it, has less calories when compared to most other chocolate cakes and so it can be your everyday cake.I made this in my new cute mini loaf pans but you can make it in a regular 5 x 9 loaf pan too, just double the recipe. I like it just this way - plain and simple - but you can most certainly dress it up with some whipped cream and berries if you so please. This is a chocolate cake you throw together real quick. It goes with tea and friends coming over on semi-short notice. It also makes for a great breakfast on the go.
