I must have made at least a couple of dozen different kinds of muffins in the last couple of years. Back when I started baking, what started as a 'let me see if I can bake a muffin of my own' has now almost become a chore. Especially so since every afternoon as my hungry kindergartner gets back from school, more often than not, her demand is to have a muffin for a snack. That makes my job to keep it interesting for her by mixing it up. This recipe is another variation that is derived from one of my own previous muffin recipes from here. Needless to say it worked great and also is just in time for fall.

Nutella filled baked donut Muffins

ow many times have you picked up a donut and set it down? Did I touch a nerve there? If I did, then read-on. I don't claim these to be the healthiest things around but they are perfect when you have a serious craving for those fried beauties. You get the same donut taste without all the frying. Being smaller they also give you portion control, be cautioned though that you will be tempted to pick up a few. These are delicious little treats, baked scrummy soft fluffy doughnut muffins coated with cinnamon sugar and filled with Nutella, how can you argue with that! Hot out of the oven, you blow on them till they cool down just enough and then chomp away... yes you can close your eyes too when you eat, it adds to the pleasure. We shamelessly finished the batch and don't even have any regrets.They are very quick and ridiculously easy to put together. They also make for a great breakfast muffin and your kids will just love them.

Double Dark Chocolate Cappuccino Muffins (Eggless and Whole Wheat)
s I was browsing around my own creations on USMasala the other day - which by-the-way I do much too less often as much as I would like to - I realized that I haven't blogged lately about any dish with one of my most favorite ingredients - Chocolate. It was also surprising to me as I make something that has chocolate in it almost every other day for my little one.So here is a recipe for a baked chocolcate goodie that is one of the most common and most loved in my household. I make a small batch of these muffins atleast twice a week and they serve me well mostly as a quick snack when kiddo gets back from her pre-school.
Now as this is a regular, it has to be healthy. So you will notice the use of whole wheat flour and olive oil and zero butter. You can use whole wheat flour or even whole wheat pastry flour, any that is locally available. To kick it up a notch, addition of coffee is a must for me in anything that I make with chocolate especially when baking.

Raspberry Muffins (eggless)

Orange Dark Chocolate Chip Muffin ~ Eggless
K, so I have no idea what to write. I am sitting here staring at my laptop for the last fifteen minutes and I literally can think of nothing! Lots of vague thoughts ~ but I am trying hard to put the words into a decent meaningful sentence - "writer's block" anyone! So lets cut to the chase..for today I have a orange dark chocolate chip muffin for you guys, the combo which I absolutely adore. These are light, fluffy, citrusy, chocolaty and summery. Did you know the word Muffin either comes from the French word moufflet, meaning a soft bread, or from the German word muffe which is the name for a type of cake. As we all know there are two types of muffins which are famous, English and American. American-style muffins are like little cakes, consisting essentially of butter, sugar and usually made with baking powder and soda. English muffins, on the other hand, are a cross between a bread and a cake and are are made from a yeast based dough.

Pineapple Mini Bundt Cake - Eggless
ineapple filled mini bundts! Cute as a button, light and fluffy with the slight hint of citrusy orange and freshness of pineapple in every bite - A sweet n refreshing pure spring- summer time treat!I go for a light breakfast especially on weekdays. Be it a bowl of cereal or oatmeal or a quick sliced bread sandwich with some fruits and veggies. To keep things interesting, I always find myself looking for ways to come up with interesting but light and yet 'breakfasty' recipes. I have found that a light muffin or a light fruit bread comes really handy.
Here's a recipe for homemade pineapple mini cakes that I made in my adorable mini bundt pan and which can be very easily made in a muffin pan if you don't have a mini bundt pan. It was really liked by hubby and my princess alike. It is mildly sweet, has a distinct taste of pineapples and is extremely light that makes it just right for breakfast. I love baking with different fruits and this one sure is a keeper.

Whole Wheat Blueberry and Oats Eggless Muffins
Eating Oatmeal for breakfast is our everyday ritual, except for the weekends.
My hubby is really fond of oatmeal.. me.. well not so much.. but due to all the awesome benefits I still also eat them. Lemon Cupcakes with lemon cream cheese frosting
If you have been a regular visitor to my blog you must have known by now that I have a clear obsession with chocolate and also most of my baked goodies are either chocolate based or consist of nutella. Every time I think of dessert, I think chocolate. Even when I am online looking for ideas, I type chocolate based search words... even when I am blog hopping, the category I check is chocolate baked goodies. You get the idea.
This time around when I was in the mood to bake some cupcakes I was again drawn towards making some black forest cupcakes or nutella cupcakes (God help me :)). But this time I struggled hard and overcame my obsession. It was mainly because of my not-much-of-a-chocolate-fan hubby (how can you!). Baked a lemon cupcake instead. I loved the results so much that from now on you will be seeing lots and lots of citrus in my baked goodies lol :) These cupcakes are so fresh, light and flavorful that even a no dessert and only chocolate person like me ate one whole cupcake with all the frosting (much to my hubby's surprise) ha ha!!

Eggless Double Chocolate Mocha Muffin
better half.. he does not detest chocolates, he will eat it.. but combine it with a little coffee and he absolutely loves it! I on the other hand will eat chocolate of any kind, anytime, dark chocolate being my favorite. I don't mind a little coffee either. So whenever I make anything chocolaty at home there has to be a little coffee in it. I personally think as well that coffee when combined with chocolate takes it to a whole new level.So I just mixed a little coffee in chocolate muffin batter and this recipe was born. I also don't always like the eggy taste in my bakes so I skip the egg altogether and it comes out great :) It is always a hit with kids too atleast I know my little one loves it.
