Paneer-Matar Paratha


In case you missed my Aloo-matar paratha from a few moons ago, this paratha is similar only better, in that it has paneer - my favorite ingredient. I have sung praises of the stuffed bread or paratha in that post so pay a visit if you are super interested! Also I described how tricky it can be for first timer and takes a little practice to get it right. Anyway, addition of Paneer gives this stuffed paratha the added soft texture as well a mildly creamy taste along with the kick of the spiced up peas. This paratha is perfect for those times when you feel like eating a yummy bread and don't really want to deal with making accompaniments. Just enjoy with some spicy Indian pickle, a simple raita or heck even ketchup.

Dhingri Matar/ Mushroom Peas Curry

Up until a few years ago in India, before they started farming mushrooms and all those supermarket chains started opening up and selling those farmed ones, the only kind of mushrooms available were the wild ones. They used to be a rarity that would only be available for a few days during the monsoons. You would find some vendors, usually local farmers that found them growing somewhere, selling them in small wicker baskets along the roadside. And boy were they gone fast. If you didn't get there in time, they were gone in the first few hours. People loved them then, and they love them now. We are no different in our family our little one included. I have come to make mushrooms many different ways. Here I present a mushroom curry done in the north Indian style. It has the bite of the mushrooms, the kick and heat from the spices along with the sweetness from the peas. One of the ways we love our mushrooms.

Cauliflower Garam Masala Pilaf

There is a simple but interesting theory behind this dish - a theory that anyone that is tasked with making nutritious and tasty yet quick lunches during the busy weekdays will appreciate. A simple rice based one pot meal that is a very good way to get the needed veggies into your family in the form of a wholesome lunch and yet can be done in under fifteen minutes. Pasta in Roasted Mushroom Garlic sauce with Green Peas


have a met a lot of pasta lovers and very few haters - as far as I am concerned I am neutral - I don't hate it neither is it one of my most favorite. My daughter on the other hand (who is fussiest eater around) is notorious for her love of pasta. Even her preschool teacher complains she doesn't eat anything but pasta. She even went on to suggest we change her menu plan to pasta everyday at school! Hubby well- he is not fond of pasta- so the scene at home is I make pasta mac'n cheese to be precise almost every single day at home for the kiddo but never really make pasta for ourselves. That probably is the reason why I have only a couple of pasta dishes on the site. We don't even order a pasta dish when we go out to eat. Last Sunday evening I was in no mood to cook two separate meals for us so I tried to make hubby like the pasta by making this dish with lots of earthy mushroom and garlicky flavor - hubby loved it and even the kiddo enjoyed it.

Methi-Matar/Fenugreek-Peas Stuffed Paratha with Grape Walnut Raita

tuffed parathas are really popular in India. They can be found on the menus of high-end restaurants as well are made fresh to order in road side dhabas. They come in different types obviously varying by their filling. I have yet to meet a person who does not like them, yes regardless of their filling. There is just something about them.
A stuffed paratha is basically an unleavened and pan fried flat bread stuffed with variety of fillings like spicy potatoes, peas, cauliflower, paneer and even with chicken. You can even find them with sweet fillings too. They are generally served simply with pickle, yogurt or just a little pat of butter... mmmm! It is a staple dish in almost all Indian households with minor variation in the recipe here and there. I remember mom often used to make these for breakfast and also sometimes for dinner with tomato chutney during winter times and it was always soul satisfying.
Hubby loves aloo paratha and my favorite is the one with stuffed peas. In this recipe I added some of the leftover methi leaves to my regular recipe of matar parathas and the result was fabulous. The sweetness of the peas with the flavor of methi and all the spices tucked inside the crispy yet soft bread was a total winner.
I chose to accompany my parathas with some raita. The raita below is one of my mom's famous raita recipe. The sweet tiny mini grapes with the fresh creamy yogurt and nuts is a the perfect side with these or any kind of stuffed parathas.

Aloo matar paratha


loo parathas are something that don't need any introduction. These are the most popular of all the stuffed parathas in India. Can be found in high-end restaurants as well as at the road side dhabas. I have not met a single person in my life who doesn't like it. It is basically an indian unleavened and pan fried flat bread stuffed with spicy potato filling, generally served with pickle, yogurt or just a little pat of butter...mmmm! It is a staple dish in almost all indian households with minor variation in the recipe here and there.
I remember mom often used to make it for breakfast and also sometimes for dinner with tomato chutney during winter times and it was soul satisfying. She also sometimes used to add peas in the filling and I always liked that better as i love green peas... so here is my mom's recipe of my fav aloo matar de parathe!

Vegetable poha

I remember, mom always used to make this when we were kids .. used to be my most fav breakfast. We used to call it chuda ka pulao as poha is called chuda where I come from. She also sometimes used to pack our lunch boxes with it and it was a great hit with my school and college friends :) this is very easy and quick to make.. can be put together in a jiffy. It is a wholesome one pot meal. It can be made numerous ways and every version is my favorite. My hubby likes his poha with lots of gobhi, peas and aloo.. so this is how I often make it.
