Thai Massaman Curry (Vegetarian)

his one time, soon after we got married and I came to the US, hubby and I went to a wedding ceremony of one of his colleagues. Strangely enough they did not have much food. Only some light snacks and drinks. So after the ceremony on our way back we decided to get lunch. He said he knew a Thai-Japanese place that was pretty good. At the restaurant we saw they had vegetarian sushi on the menu. I got all excited about it and we ordered it. When it arrived, it looked really pretty, got me even more excited to try it out. Hated it. I almost spit it out in my napkin. I kid you not. To my surprise though, hubby seemed to like it. Well anyway that was end of Sushi for me for a very long time. Well that was until we went to another Thai restaurant and this time hubby knew better than to order Sushi. So he ordered, you guessed it, Massaman curry. That was the day I was completely hooked to Thai cuisine. Thai is now definitely my favorite after Italian (and of course Indian) cuisine. I like everything about Thai cuisine; the ingredients used, its flavor, the way it’s cooked, the fresh herbs and aromatic spices and above all the way it tastes. And another reason for my love affair with Thai food is the familiar spices flavors with my very own Indian cuisine. Among the different Thai dishes, the varieties of curries definitely top the charts. The unique burst of flavors and the gorgeous color is so appealing that I order it over and over again whenever I am at any Thai restaurant. Not quite so popular as its more popular cousins Red curry, Green n Yellow Thai Curry, but heartier and a lot more aromatic is the unique Massaman Curry. It’s a sort of fusion between Thai and Indian food :)The tamarind, coconut and spices give it a distinct Indian flavor.

Coconut rice

If you saw my Yogurt Vadai post from a couple of weeks ago, you will know about the my cool new possession, my new cookbook 'Dakshin'. From the different recipes that I had bookmarked and in keeping with my promise, here's another one of my favorite ones from the book.
I'd heard about this rice a lot. At first it didn't seem like a big deal, after all it was rice mixed with shredded coconut. However, I wanted to make it the authentic way so I followed the recipe and let me tell you, when done right, it is far more than just coconut mixed with rice. Also, it is a perfect way to use the leftover rice with a very quick yet elegant makeover.

Ras Malai - My 50th post :)

 can’t believe its my 50th post already.. and it’s been loads of fun all the way. USMasala is not even two months old and I am very very proud of this milestone :) I have been totally addicted to the world of blogging... my hubby can vouch for that :D as am ignoring everything else. Your encouraging comments is always the first thing I read in the morning and they always make my day. I have made so many friends and have discovered so many wonderful blogs it feels awesome!! I am thankful to all my readers especially my fellow bloggers who welcomed me with an open heart in the blogsphere with their encouraging words. Guys your love and support is the reason I have become 100 times more passionate about cooking, experimenting, taking beautiful pics... ok now the big confession all the pics of USMasala which I always get compliments for is taken by my dear hubby... so I thank him too for making my blog wonderful and so colorful... Thanks sweetheart!
So to all you wonderful people out there, a big THANKYOU and watch out for more from USMasala. LOVE you all!!
For my 50th I have chosen my hubs all time favorite Indian sweet Ras-malai. Hope you guys like it.Ras-Malai, soft spongy and delicate cheese balls in a creamy thick sweetened milk sauce with a hint of saffron, nuts and green cardamom, is a delectable and one of the most popular of all Indian desserts.
