Zucchini Thepla/Spicy Zucchini Flatbread

rowsing around the categories on USMasala you will notice a couple of different other Thepla recipes - the classic Methi Thepla and the Tofu variation of it. Here's another one.
You may find this a little unusual but the thought of this dish puts me on a train with my family... the train speeding through the country and I find myself sitting on the lower berth (after of course having fought with my brother for the window seat) with my gaze fixed outside staring at the lush green crop fields that race past us and the warm yet cool breeze rushing in as we wait for the train to take us to our destination... then you are suddenly pulled out of the trance by the loud sound of your name... thats mom demanding we get together as it was lunch time... and there it is... she opens her tote bag and pulls out a couple of boxes. Wrapped in tinfoil in those boxes are these wonderful flat breads with awesome dry potato curry and pickle. The already beautiful breeze is now filled with the wonderful aroma of the roasted fennel and carom seeds from the bread and the potatoes.
Mom almost always made these as lunch and as dinner when we traveled. She claimed they stayed nice and fresh even after being packed for several hours... and fresh they were... gone in minutes. Of course I didn't think much of it those days... after all that was mom and this is what she always made, right? ... aah... the things we take for granted.

Mango nut ice-cream

Making a good ice-cream is typically considered a very difficult task. I know because I have been there. I always thought good ice-cream can never be made at home or at least not without an ice-cream machine. But when I made Kulfi a few times, I figured why not try making ice-cream at home. I am glad I tried because I know this is a keeper recipe and will be a regular in our household. I had some mango puree left after making the mango lassi, also my brother and hubby are crazy for mango flavored anything, so I made mango ice-cream. I also added a few cashew nuts as we like the nutty taste in our ice-cream.This recipe is so easy that you will be amazed by the result, no churning, no ice-cream machine, no long list of ingredients. Pista Falooda Kulfi


Kulfi is an indian version of ice-cream... often flavored with cardamom, saffron and nuts, it has a very unique flavor. It has similarities with ice cream in term of texture, taste and of course the fact that it is frozen milk! But unlike Western ice creams, kulfi is not whipped, resulting in a solid, dense frozen dessert.Where I come from, it is often served with falooda noodles( kind of like vermicelli)

During the summers in india, there is no dessert more popular than kulfi.
So, there is an easy way to do things and then there is a not-so-easy way! Here I will show you the easy way :) It is often considered very hard to make, stirring the milk for hours in the kitchen and all... but today I am giving a very fuss-free easy-breezy kulfi recipe. It is soooo easy even kids can make it. Infact it is a great cooking/fun project to do with kids... and they love to eat it too. My daughter is a fussy eater, doesn't even like ice-cream very much but she gobbled this one up.
It has always been my favorite.. always hit with guests.. so without much delay here goes the recipe.
